It was a sake ---- in Inami-cho, Hyogo Prefecture.
Last November, the owner passed away and the business was closed.
As soon as I heard the news, I visited liquor stores and supermarkets in Inami-cho and Kakogawa City, but there were no more left, and after visiting about five stores, I finally got a bottle.
I kept it for half a year, but decided to open it to commemorate my 100th repo and to celebrate my birthday, even though it was a little too late.
(It is a very important sake, so I kept it chilled.)
It has a sharp sweetness, a spiciness that comes on slowly, and a gasiness that stimulates the tip of the tongue.

Not too strong, but a firm fruity aroma, with a slightly citrusy acidity that is really nice! Delicious!
How about when warmed up?
The sweetness is rich and thick. It tastes light.
However, the fruity and gassy taste is more enjoyable, so I would prefer to drink it cold.
I met Wakatsuki Kozuchi at a bar I used to frequent in Akashi.
While enjoying the junmai sake chilled, I enjoyed the proprietor's thoughtful appetizers, and finished with good white rice, homemade curry, and pork miso soup. It was a fun time on payday.

I am grateful to the sake gods for letting me encounter such delicious sake.
