The brewer aimed to create a lighter flavor than that of white wine, which has a refreshing taste. The white malted rice usually used for shochu is used to give it a citrusy sour taste. The low alcohol content makes it easy to drink, and the fire-roasting process mellows the flavor. The sweetness is slightly richer than the usual white malted rice pattern.
