Kawazawa Shuzo's "Clouds in the Mountains Go'ou Go'ou Junmai Daiginjo
Goh-oh-oh" is the sound made when the sky roars low in the Honkawa area at the foot of Mount Kanpu in the Shikoku Mountains, where the weather changes rapidly. This Junmai Daiginjo-shu expresses the power and blessings of nature through the taste of sake. It has a mild, full-bodied flavor reminiscent of spreading black clouds and a fruity aroma produced by CEL24 and Super CEL24 yeast. The fruity aroma and rich sweet flavor fill the mouth, but the aftertaste is surprisingly light. It does not have the heaviness characteristic of sake.
The rice used for this sake is "Gin-no-Yume," Kochi's sake rice, polished to 50% of its original form, and carefully brewed. This is one of the bottles in the "Clouds in the Mountains" series that pursues a more fruity taste.
