As the sake is made with wine yeast, I was expecting a touch of acidity, but it didn't seem to be there in the current state, giving a crisp, hard impression. However, there is a sense that this would go well with food. It was purchased in a magnum bottle instead of a 1-square-bottle. I'm told that Eiko Fuji is a brewery that works in a variety of ways, so I'm looking forward to trying a variety of them.
