On the first day, we had pizza and other Italian dishes, and it was poured mainly with the supernatant and had a clear, acidic sweetness that was perfect.
On the second day, it was poured with more lees and the taste changed to a sake-like flavor, making it perfect for salads and Japanese food, especially grilled fish.
It is a very good sake.
