おむすび
This is the second bottle of sake I bought on a business trip to Hokkaido.
It's a sake made from "Comet", the best rice for sake brewing in Hokkaido. I've never heard of Comet before. There are many kinds of sake brewing rice.
When you take a sip, it has the sourness and aroma of the Namamoto style. You can taste the umami, but I think the acidity is a bit stronger than the umami.
The sharpness is also good. And at the end there is a bitter taste.
At any rate, it is not a bad match with cotton tofu with ginger on it!
