The first Bodhi yeast.
I expected a strong acidity, but it was round and gentle.
It is fresh and elegant.
Before it hits the back of the throat, it disappears leaving behind umami and a slight bitterness.
Since it does not destroy the flavor of the ingredients, it goes well with light dishes such as chilled tofu and soaked vegetables.
