The aroma is mild, with a classic rice and grain aroma.
The taste is rich and full of sweetness and umami.
You can clearly taste the original flavor of rice as if you were drinking rice soup.
As expected from a daiginjo, the taste is very clean and pure, with no bitterness or other unpleasant tastes at all, and the acidity is kept quite low.
It is my first time drinking this type of sake and I was a little surprised, but the more I drink it, the more I understand its depth.
It seems to have great potential especially as a food sake, and it would be interesting to pair it with rice as a substitute.
