According to research, the name "Iono" comes from a former place name for the Uonuma area, including Ojiya where the brewery is located. The Uonuma area of Niigata Prefecture was also called "Iono" in the "Chronicles of Tsugaru Japan", from the word "fish" (io) returning to "place" (no).
When poured into a glass, the ginjo aroma is almost imperceptible. The first sensation when drinking it is a light sourness and sweetness. If anything, the refreshing sourness is stronger...
The concept of this sake is that it is brewed to be a "great side dish" sake. It is an easy to drink sake.
