Next is "Heterodox Gyojo Kabushiki Kaisya," also a first-time brewer, which is said to be the most challenging among Shinsei's various creations.
Based on "Flax Cat," which has high acidity due to the use of white malted rice for shochu, it is finished by storing it in Japanese oak barrels. Usually, it is stored for about three years, but we were served it at an early stage.
It is a very interesting sake with a more intense acidity than "Noumin Geijutsu Kairon", yet with a mild sweetness and a lingering aftertaste, with a sense of complexity and still some freshness!
