Dio Abita" means "God's abode" in Italian. The sake is made from Yamada-Nishiki grown in cooperation with local farmers using water from the Miwa Mountain subsoil, which is called "water of the gods. Originally a seasonal sake, it is now sold year-round in response to demand.
When poured into a glass, it has a fresh ginjo aroma like green apples. The first impression is that it has a light taste, which can be said to be due to the low alcohol content, but the umami of the rice can be felt well enough to make it a pleasant drink. The aftertaste is crisp and refreshing with a refreshing acidity that brings it all together. You will be drinking it without even knowing it... This is delicious!
