The sake is made from home-grown Kame-no-o and brewed with brewer's yeast. The rice polishing ratio is probably over 90%. I was curious to know what it tasted like, so I bought a bottle.
The aroma was fruity and sweet with a full-bodied rice flavor.
The taste is also fruity, with the umami of the rice and the sweetness of the rice. Perhaps due to the high milling ratio of the rice, it had a banana-like atmosphere with a mixture of sweetness and a tangy taste in a good way.
Next time, I would like to try it slightly warmed, lukewarm or hot.
