This is the first time I've had nama-zake since I learned about the classification of sake. I only thought of it as sake that was chilled in the refrigerator...
And even so, it's the most fizzy sake I've ever had. I didn't realize it was a micro-foam...it is clearly fizzy.
The fizz also spreads the flavor of the sake in the mouth, and the mellowness, complexity, and fizz are all mixed up together...it's really good. I learn that this is the taste of sake that is popular nowadays. It is delicious.
On the second day, the fizz settles down a bit and the taste of the sake becomes stronger. The flavor is coming through. I am looking forward to the next day and beyond.
