Commentary. This Junmai Daiginjo is brewed using Iwate Prefecture rice "Ginga" (50% polishing ratio) and original Iwate Prefecture yeast. The malt is fermented at low temperature for a long period of time, and the sake is pressed gently in the tank, giving it a soft and gentle aroma. It is characterized by its mellow aroma and full-bodied mouthfeel. It is a good choice for a cold sake.
