I asked the owner for a recommendation for a robust umami sake and he offered this one.
It was brewed in 2020, and the brewer had been putting it in storage and bottled it this year.
Compared to the Raku no se that we had earlier, this sake was a little lighter in taste, but it was a delicious sake with a good balance of sweetness, umami, and acidity.
There are many good honjozo sake these days 🍶.
