He said it's brewed with wine yeast. I think I see a lot of it these days. Muscat-like aroma. Much lighter than the aroma. Citrus-like acidity. And the rice has a sense of body, or perhaps a roughness to it. And the rice is delicious. I like this balance of flavors. When it warms up a little, it has a soft sweetness like syrup.
