It is indeed delicious, as brewer Kazuki said at the recent SakeLab Tokyo concert, and he said he would love to have the January 2025 lot.
When I drank the supernatant before mixing it, it was quite refreshing and had a schwiffy feeling.
When I drank the top clear after mixing it, it was quite refreshing, but it became mellow due to the lees involved. The fourth picture shows it.
I wonder if it is fire-aged.
