The aroma is fresh and elegant.
The taste is like the sweetness of pear concentrated about 10 times and the delicious flavor of rice hits you. The mouthfeel is refreshing, but after swallowing, the lingering aftertaste with a sense of gravity is wonderful.
It has less trompe l'oeil than the Bodai yeast, and the acidity is just as slight. I like sake with a long aftertaste, so I really like it. The umami is very strong.
Oh, it is perfect. Beautiful. I am happy.
