Junmai Ginjo sake with a 55% rice polishing ratio
According to my research, this sake was brewed under the theme of "sake that can be drunk refreshingly on a hot summer day" from the Wakaha brand, with the image of "sake that is dry and acidic like white wine.
The name "FY2" comes from the use of "Fukuoka Dream Yeast No. 2," which produces 2-3 times more malic acid than normal.
When poured into a glass, it has a sweet and sour aroma. My first impression when I drank it was that it was a true apple wine! It's so full of apple that I thought it was a cider. It's so full of apple flavor that I thought it might be a cider. It is said that some white malted rice is also used, so it has a lemony sharpness and dryness, as well as a refreshing sourness that is really characteristic.
Personally, I'm not a big fan of sake in the genre of wakaze or wagei Yamamoto, so I'm not going to give it a high rating, but it's definitely a delicious sake.
