It would be a bit of a half-hearted person not to drink Machida Sake Brewery despite being a Gunma sake lover. So I bought a bottle of Machida Shuzo, aka "Gunma's Wind Forest". It is a new sake, but it was still on sale, so I was lucky enough to buy it. The aroma is not strong like a special junmai, but it is not lacking either (55% polished rice is the standard for junmai ginjo, after all). The aroma is like that of Kaze no Mori or Mimuro Sugi, and at this point you can tell it is delicious. Really? You may think, "Really?" but it has a freshness that makes you believe that it is indeed directly pumped. The reason is that the moment you take a sip, it is like the Igarashi you drank most recently...lol. As one would expect from a July sipper, it has matured moderately and has a very rounded texture. It is a self-serve fresh ripeness. You can feel the sweetness. The acidity and accompanying umami from the mid-palate and the bitterness at the end of the bottle balance out the overall taste. The way the umami acidity and bitterness are balanced and the sharpness of the alcohol at the end give it a perfect sweetness, but it does not feel too sweet at all.
