99% of the rice used is koji!
When you pour it into a glass, you can visually see if it has a tender texture. It has a sweet aroma.
When you put it in your mouth, it is crisp and clear, but a fruity sweetness like a banana goes through your nose, and then you feel the acidity.
What is this! It's delicious.
It goes well with the mildness of the sea urchin that I handled for the first time!
I didn't get to go anywhere during Golden Week, but I'm glad I found this delicious sake.
I also wanted to try the "Research Brewing Series Sake Rice and Koji Ratio Complete Set", though it's not available.
