On the palate, there is a good balance of sweetness, umami, and acidity. From there, sweetness, acidity, and later, umami spread out softly. It is very beautiful.
Above all, the fragrance is very beautiful. The rich sweetness and umami are wafting through the air. The bitterness in the back is also very nice.
The sweetness is syrup, the acidity is lychee, the umami is firm like brown rice, and the bitterness is a beautiful bitterness that I can't think of anything similar to. Ummm!
The individual flavors are not very strong, but as a whole they are very impressive.
As it warms up, the acidity opens up a bit, which is also pleasant. I liked it best when it was cooled down (15℃).
If I were to use a Ghibli analogy, it would be Ashitaka, the main character in "Princess Mononoke. He is hard and cool, but also fresh and gentle, with a hint of sex appeal. His eyes are clear and beautiful.
