Exports are booming, and an innovative sake brewery, Iwakuni Asahi Sake Brewery in Yamaguchi Prefecture, has finally established a brewery in the United States. For the sake of Japan and the future of sake, we hope that they will continue to earn foreign currencies.
The sparkling daiginjo is, as usual, recommended by Ms. Seiko Yamauchi, a sake master of my heart. The bubbles from the second fermentation in the bottle are strong and almost champagne-like. It goes well with sweet sweets. There was a note to be careful when opening the bottle, but perhaps because it had been sitting in the refrigerator, it did not blow out.
