Tsuchida seeks what sake can and should be.
This is a sake with a rice polishing ratio of 90, brewed with yellow malted rice for shochu.
At first glance, it looks like mirin (sweet rice wine) and tastes like it, but it has a nice acidity.
And as the label says, it is good at room temperature. It is still too strong for me, so I drink it at room temperature with a weak carbonation, and I can linger on it forever.
But what is yellow malted rice for shochu? I wonder how it is different from ordinary yellow malted rice.
