Super dry at +15.
I always see the fire-roasted type, but this is the first time in several years that a fresh one has appeared, so I bought it on recommendation.
It is not my favorite, but I also wanted to try it to see how super-harsh it is.
It was surprisingly soft on the palate, and perhaps because of the freshness and transparency of the sake, it was strangely not as spicy as I had expected. It is delicious.
Rolling it over, it has bitterness and a firm umami flavor. The sharpness of the taste suggests that it would be good with Japanese food such as fish and simmered dishes, rather than Chinese or Western food.
Because of the strong alcohol content, I drank less than usual.
