Sweet banana-like top nose
It has a slightly thickened texture on the tongue with a slightly gorgeous aroma of banana and a hint of yogurt mixed together, a moderate sweetness, the umami of rice, and a small amount of lactic acidity that spreads out and is quickly broken by bitterness and a slight alcohol spiciness.
Elegant and gorgeous sake with a slightly classical impression.
This Shoyuki is also different from the Shoyuki my wife remembers...
It went well with hijiki and tuna mixed rice, Otaru Narutoya's zangi, and homemade smoked gakko.
It did not go well with bonito tataki.
