Salinger
Yamadaho Polishing ratio 44
I read "Yamadaho" but I heard it is read as "Yamadabo"...
Aroma
Fruity ginjo aroma.
Sourness aroma like a combination of apple, peach, and pineapple.
Sourness is the main aroma, but there is also a soft sweetness.
Nice aroma.
You can also taste the umami of the rice from the aroma.
Taste
Sourness is the main taste on the palate.
However, the sourness is followed by a fruity sweetness and the umami of the rice that spreads in the mouth.
The balance of acidity, sweetness, and umami is very good, and it is very pleasant to drink.
Summary
This sake is not just a simple sweet and umami sake, but a sake with a delicious acidity.
If the only flavor was sourness, it would be hard to choose who would drink it, but that is what the Jr. series is all about.
The sweet and tasty flavor that does not overwhelm the palate is what brings it all together in the end, making it very easy to drink.
Yamadaho sake rice is also known for its acidity and umami, and I wonder if this is a result of its characteristics.
Since the middle of this year, I have been comparing the Jr. series and have come to understand the differences in aroma and taste between the different sake rice varieties.
However, even looking back at past check-ins, it is difficult to convey the differences in writing....
I am not aiming to become a sake connoisseur, but....
