The young brewery <Shibata Sake Brewery> is now the focus of much attention. This young brewery has renewed its brewery facilities over the past few years, and the quality of its sake has been dramatically improving. The brewery uses only the characteristic ultra-soft "Shinsui" water and local Aichi Prefecture ingredients to brew two brands of sake with different tastes: the modern, light-tasting "Ko no Tsukasa" and the classic, full-bodied "gin-gin". ------------- New label this season! Shibata Sake Brewery's representative brand "Takashi no Tsukasa" summer sake <Summer Festival>-. This bottle is made with "Yumesansui" produced locally in Aichi Prefecture and the brewery's signature ultra-soft "Jinsui" water, and has a refreshing gaseous taste that reminds one of exciting summer days, and a low alcohol content in the 13 degree range to make it easy to drink even on hot days. It is perfect for summer, with a moderate amount of gas that can be felt on the tongue and a refreshing apple taste made with Aichi sake yeast "FIA3"! The alcohol content is in the 13% range, making it light and easy to drink even on a hot day. Furthermore, since it is made by single heating of the original sake, it has a well-balanced combination of a good sweetness that can be properly felt in the lightness and the soft texture of a light nigori (light cloudy) taste. It is characterized by a cool aftertaste that can be enjoyed in large gulps.
