I've never had an Aisan before! The fourteenth generation's freshly opened is a little schwagged - that's what I'm talking about, freshly packed! The sweetness is surprisingly moderate, with a little more acidity than the Honmaru. It tastes almost like a hard white peach. I compared it with the Ho'o Bida BP fire-boiling, and I thought that the Aisan is a type of sake rice that shouldn't be fired. I learned....

I drank a lot of Aisan and added a note. I think Aisan has a lot of hard liquor after opening the package. Is it because the rice is hard to dissolve? After a while, the flavor starts to build up and the taste gets better. I heard that Jyushiyo is bottled after letting it sit in a tank for a while. It tastes good freshly opened.
