I was told that a new female toji (brewer) had arrived. The old Kawatsuru, if I remember correctly, had a rich taste similar to Iwate's Kikunoji.
This time, it has the petite texture, fresh sweetness, bitterness, and faint acidity that only unpasteurized sake can have. The aroma and taste are refreshing and easy to drink!
