After graduating from Tokyo University of Agriculture with a degree in brewing, Akitsuna Takagi worked for a major department store in Tokyo before returning to the brewery in 1993 when the aging master brewer retired. In 1993, upon the retirement of the aging toji (master brewer), he returned to the brewery and began brewing sake as a toji (master brewer). My pride as a son of a sake brewer was shattered and I was shocked. I was also humiliated by the lack of recognition of my family's brewery. I really wanted to compete in Tokyo to get rid of that humiliation. The young master brewer brewed a new and innovative type of sake that was well received by the sake store owners who brought it to the brewery, and sales steadily increased. This was the beginning of the history of Jyushidai, and "Jyushidai Nakadori Junmai Unfiltered" became the origin of Jyushidai. This was the beginning of the history of Jyushidai. So, this is the very first Jyushidai! Yum😋.
