It's been a while since I've had a bottle of Jiheiji!
The first time I opened the bottle, the impression was of complexity and high acidity.
As time goes by, the pear flavor increases and the acidity calms down and becomes mellow.
I'm not sure what to make of it, but I'm sure it'll be great.
100% home-grown Yamada Nishiki from Kurodasho-cho
Polishing ratio : 30%.
