When I went on a business trip to Akita, I got this at the Hinai Jidori restaurant, and I got it again at Hatsudai.
I was surprised at how clear the taste became with low rice polishing. Of course, compared to No.6 X and S, it has a solid impression of weight of umami. I like the balance of complex bitterness and grapefruit-like aroma.
And if you dare to drink it hot, the umami, sourness and bitterness bloom in a well-balanced way, giving it a really deep flavor.
