This is a special junmai from Kirameki by Sasebo, Nagasaki Prefecture's Kururyu Sake Brewery.
It was recommended to us by the sake cellar "Sake Cellar Haretoke" in Fukushima, Osaka, as a sake suitable for room temperature to warmed sake that goes well with okonomiyaki.
First, it was served at room temperature.
The nose is a little acidic, but the pleasant ginjo aroma is gentle.
In the mouth, the taste is slightly thickened at first, but later the umami and acidity come through and the alcohol feeling goes away, leaving a rounded umami lingering in the aftertaste.
As you continue drinking, the gentle umami gradually becomes stronger.
It has a modest flavor that does not interfere with the taste of light meals.
Next, we tried it warmed (45°C).
The aroma and taste of the sake become less acidic as it warms up, and the rounded rice flavor and sweetness gradually spread in the mouth along with the warmth of the sake.
It is 100% Yamada-Nishiki with a milling ratio of 60%, a low sugar content, an acidity of 1.5, and a relatively moderate alcohol content of 15 degrees. Thanks for the treat.
