Next up was a sake from Okura Sake Brewery (^o^), attracted by the word Hitogokochi. The brewer said he had heard that Hitogokochi was a good rice for sake and decided to make it, although he did not seem to have any connection with Nagano. The aroma is full of sourness like grapefruit or lemon, which is typical of Yamahai sake. When you drink it, the sweetness does not come so much, but the acidity and umami come through, and the aftertaste is very heavy. It is delicious. It also has a roughness that is typical of a directly brewed sake. I felt like I could see a new side of Hitokokochi again.
