For my first Kaze no Mori in three years, I chose Yamadanishiki 807, which I liked.
It opened with great vigor and a slight effervescence as usual.
But when I tasted it, I wondered if it was the change in the brewing process or the change in the drinker...it was quite different from the impression I had before.
I waited 3 days after opening the bottle and tried it again. The taste was a little fuller, but it was not as rich and delicious as before, supported by the rich acidity.
Was it my strong feelings that had inflated my impression?
I drank more than 20 bottles of Kaze no Mori over the past 2 years since 5 years ago.
I was taught that the expression of the sake changes dramatically not only depending on the rice used, but also on the degree of polishing and the degree of alcohol content.
Does that mean it is still changing...
