Yamawa Sake Brewery always serves it fresh. The sake is designed to be so clean that it would be a waste to describe it as "refreshing. This summer-only sake on the rocks has a nice "slightly dark" flavor. It is not full of maturity, but rather a refreshingly strong flavor. The acidity, which is the key flavor, is nicely outlined. Many people always praise Yamawa for the high quality of their "special junmai sake," and it is truly amazing. It goes better with boiled, grilled, or soup stock dishes than raw fish dishes such as salted fish. The impact is very light, but it is a sparkling summer sake. The "Yama Wa" characters, which look like seashells or mother-of-pearl inlay, give it a summery aroma.
So I was looking forward to drinking it.
It was my first time, but it was delicious.
You can never go wrong with sake from the Tohoku region!
