The first spring sake of the year is Kankoubai from Mie!
I have never had this sake before, but it is said to be one of the breweries that have improved the quality of their sake in recent years.
The aroma is relatively subdued with a slight banana flavor.
It is quite surprising because I have an impression that spring sake is sweet and sour!
The taste has some acidity, but overall it is not sweet and sour.
At first, there is a berry-like sourness that reminds me a little of Sairai and Wakamusume, but it is not sweet enough.
The next is a beautiful umami, and the last is a slight bitterness, which I personally classify as umami-bitter-acid.
It's not that it's not tasty, but as a spring sake, it's a bit of a letdown.
If you exclude your preconceived notions and preferences, I think it's a totally delicious sake.
