It is said to be the one and only sake brewed with "Gin-no-sato" sake rice grown on the island's soil and underground water that was searched for five years in Iki, where the brewery is located (quoted on the Todoroki Sake Brewery website).
From the fruity aroma of strawberries and lychee, the sake has a good balance between the unique, calm sweetness, umami, and moderate gassiness, ending with a small to slightly medium bitterness that fades out nicely✨.
I got hooked on Yokoyama with their summer jungin, and this was another must-try for those who like sweet and umami 😊.
