100% Yamadanishiki from Saga, polished to 39
The aroma is quite pure and capechi type.
A little sourness and a hint of alcohol, but overall it is fruity and green apple-like.
The taste has a slightly milky texture with pure rice flavor.
Sweetness is surprisingly low and somewhat dry.
Comparatively monotonous, but usually delicious.
Overall, it is a super-balanced sake with a middle mouthfeel, somewhere between classic and modern.
As a food sake, it is a versatile type of sake and can be easily matched with anything.
