Rice polishing ratio, koji and kake are both 55%. The alcohol content is 16 degrees. I bought it because of the beautiful blue bottle and the reasonable price. This is my first Sawanoi. The label says, "When I heard the word Ginjo, I used to be nervous. Now, it is the blue sky that fills the white porcelain cup that waits for the first offering quietly in the heart. The world of Ginjo will come soon]. When you taste it, you feel a light sourness and a light alcohol on the nose. When you swallow it, there is a different sweet and sour taste and an alcohol feeling that lingers on the tongue that is typical of unpasteurized sake. I think I like this sake a lot!
