It's been a hot day, so I knew I wanted to buy some schwashuwa, but it was too hot to get my hands on any sake. I finally opened a bottle of shuwashuwa, but there was a big disturbance. The clerk at the liquor store told me to be careful with a stronger tone than usual. The moment I peeled off the outside to make sure it was OK, the crown flew up to the ceiling. And while I was looking for the crown, it spilled out.
On the first day, it was delicious, with a good balance of sweetness and bitterness with a firm schwash.
And now, three days after opening the bottle.
It has calmed down considerably.
It is already slightly effervescent.
There is a slight cemedine smell, but it doesn't bother me that much. I am sure it is mellowed by the oli.
The first taste is sour and bitter. The sweetness comes in the latter half, and this sweetness is surprisingly strong.
Today, I paired it with beef, which was a nice touch. It may be tough with something light and refreshing.
I think it was a mistake to buy it in a bottle. This sake may be suitable for restaurants.
