It has no unwanted taste, which is only possible with "Shizukutori" pressed by gravity alone. It is delicious! Specifications Brand Name: Jyushiyo Tokutei Omachi Shizukutori, Doubottobirai, Ookyokami Morohaku Sake Brewer : Takagi Shuzo (Murayama City, Yamagata Prefecture) This place is great! The brewer uses 100% "Tokkodo Omachi" produced in Okayama Prefecture. The sake is then divided into 18-liter bottles called "tobin" and matured. Characteristics: It has the complex and powerful flavor typical of Omachi, but has been sublimated to a "water-like clarity" through Jyushiyo's unique techniques. Pairing Suggestion: For this beautiful sweetness and acidity, the best pairing would be "sweet shrimp sashimi" with its delicate sweetness, or "raw oysters (with a squeeze of lemon)" with its minerality.
