Aizan from Tateyama in Toyama. The sweetness typical of Aizan rises quickly, followed by the dry texture, bitterness, and spiciness typical of Hokuriku sake. It is very dry for Aizan. I wonder if it is the difference in the water. Sake from Hokuriku and Niigata has a high hardness (high mineral content?). It tastes like water.
