The aroma is mild and not very noticeable.
The mouthfeel is like water. However, when the sake comes into contact with air in the mouth, sweet and bitter flavors appear with a hint of fragrance. The fragrance is very pleasant. The deliciousness of the rice, sweetness, and a slight alcohol taste are all there.
At the end, it disappears in a flash and is crisp, but there is still a hint of deliciousness somewhere, which makes me very happy.
There is a bit of bitterness, but it is a beautiful sake. It doesn't have a strong sense of maturity, but I can feel the accumulation of years. I looked up the name of this sake and found out that it is a Junmai Daiginjo blend of raw sake that has been aged at -10℃ in ice temperature and then heated just before shipping to seal in the mellow seasonal flavor. I see what you mean.
If I were to use a Ghibli analogy, it would be Serine from "Nausicaa of the Valley of the Wind". She is the daughter of the "forest people," a legendary tribe living in the Sea of Decomposition, who appear only in the original manga version. She is a beautiful girl, but she also has a mysterious atmosphere.
