It tastes like a lactobacillus drink. The milky, sweet and sour taste is delicious.
It is a modern sake made from the traditional sake yeast. Oh, my goodness!
It's a little bit expensive (I'm ashamed to say I'm a cheapskate), but the quality is really high...!
I also felt that the sake was quite modern, including the label and flavor. The sake brewery itself is also involved in various modern initiatives such as terroir and SDGs, so I am sure that the "little bit more" price is an investment in the future.
