Shiraoi which BOUKEN got.
The brewery in Shiraoi was established by Giheiji Sawada, the third generation brewer, who developed the "fast brewing method" in the Meiji era (1868-1912).
In 2020, the koji room, the core of the brewing process, was burned down, but the brewery reopened without incident.
The brewery is famous for its "Shiraubai" plum wine, which is made using the same methods as those used by brewers in the Edo period.
Shiraoi Wakamizu Junmai 70% polished rice, directly brewed at the brewery.
It is fresh, sweet, flavorful, and thick with a gaseous taste.
I had a good impression of this sake at the "Takashimaya Sake Festival" and it was also delicious.
