Smooth, hard and fizzy mouthfeel.
Citrus acidity and bitterness. The flavor is not overly harsh. Hard and harsh but elegant.
Serve with Tanba Sasayama black soybean edamame, yose-tofu, flatfish sashimi, and matsutake mushroom rice.
