When I got into sake, Hatsuson was the first sake that I could easily identify as a "sake brewer's yeast yeast". However, I had the impression that it was a little different from my taste.
This Ittetsu is also light and spicy. It also has an austerity similar to that of red wine (I may be the only one with this feeling). It has a little bit of richness. Ittoto is also a typical sake yeast yeast yeast yeast.
