Fukkai (formerly Fukuda) produces some sake with out-of-grade rice.
All of them are really excellent!
The balance of light but firm umami, sharpness, and acidity, with a hint of bubbles, is wonderful 🤤.
It's a bottle that is very satisfying on its own, and when paired with a meal, it doubles the flavor, making it an impeccable bottle. ❗️
